We need something that can be made in 45 minutes or less when we get home from work. We have a crock pot and all the standard kitchen gadgets. All we lack is inspiration….Here’s what’s in our standard rotation – any other ideas?
- Grilled cheese and tomato soup
- Veggie omelet with biscuits
- Pasta with red sauce
- Pizza delivery
- Thai food delivery
- Indian food delivery
We definitely need help! :)

One of our favorites is macaroni and cheese.
With practice, I think it will be possible to make a nice, reasonably nutritionally sound casserole in 45 minutes. I’m also a big fan of having something ready right when we walk in the door- sliced apples and cheese, for instance.
Tacos make a frequent appearance at our house when we’re pushed for time. I am also a big fan of crock pot meals. I make corned beef and cabbage in the crock pot a lot (which means reubens with the leftovers — 2 meals in one!). I also like starting with some kind of mix, but dressing it up a bit, like Zataran’s red beans and rice from a box, but adding sausage and fixing a veggie. (Admittedly, none of these options are terribly healthy…)
In our case, we use a lot a steamer and a indoor grill. You can have dinner ready in less than 30 min. The veggies and potatoes in the steamer take max 15 min, and the meat (pork, beef, chicken, fish) max 20 min. You can use different spices for the meat to make it more interesting. An on top of the time, you are eating healthy. The steamer is about $25, and the grill about $30. It’s a good investment.
