This time of year makes me want to use exclamation points all the time! I’ll try to keep it to a minimum but its hard, especially when you’re making whoopie pies! Zoe and Tommy saw this recipe in the newspaper for Two Bite Gingerbread Whoopie Pies and thought it was the funniest name they’d ever heard. Naturally we had to make them.
Baking with kids really requires me to slow down and remember that the process is almost more important than the result for them. Scooping, measuring, pouring, turning on the mixer – its all big fun. And when its been raining steadily for days, it can be good when baking with kids takes 3x as long as baking alone.
The cookies were good except too much lemon (and I only used half what the recipe called for), but the kids enjoyed yelling “whoopie!” before every first bite, and really, what’s more fun than that?
